Easter Side Dishes
By Sandy Considine
This week’s article is about some great sides to add to your Easter meal, something different or maybe already traditional.
Let’s take pickled eggs, they always seem to be at holiday meals and picnics. Pickled eggs were always a dish my mom was elected to make, and I mean she took it seriously. She made an amount that fits in a 2-gallon jar. She would always say to me “Sandy, when are you going to learn how to make these?” My reply was “but mom you always make them”. We all have memories of parents and grandparents who brought their specialty. My grandma had macaroni salad and sticky buns, now I scramble to make this gluten free, a work in progress for sure. But the memories are special, pass them on to the next generation to keep it alive. But also create some new traditions of your own. Enjoy!
