Soups On!

Soup sounds so comforting and filling, especially on these cold winter days. Soup is always my go-to meal all year long. The reasons to love soup are easy. Soup is easy on the wallet, and I am inclined to share recipes that are budget friendly with easy to find ingredients and easy to find herbs and spices. I like to take a morning or afternoon to make a few different soups.

Why not? All the most used ingredients are already out like onions, garlic, carrots, celery so why not save time and prepare extra soup for the week. You can freeze it, use it for lunches, offer two different soups for your family meal. I just like to take advantage of saving time and kitchen cleanup. When you don’t know what to have for supper, you will already have a prepared soup. Just add some crusty bread (for Celiacs, some Gluten Free crusty bread).

My recipes are meat free but feel free to add some cooked chicken as some recipes call for or perhaps some ground beef. I don’t expect you to be meat free as I am.

Soup has so many nutritional benefits, soup is a nutritional powerhouse depending on the recipe. Being full of Omega 3 fatty acids, B vitamins, iron and zinc. Soup is hydrating with all the water and broth and water filled veggies like celery. Eat soup to boost and strengthen your immune system.

If you haven’t noticed I love soup of all kinds and I want to share a few of my favorites that will hit the spot this cold January and going into February. The recipes given are as written but having made them I have made a few changes the second time around as you will also. Make the recipe with all the given spices but adjust them if not sure of the outcome on taste. I love cumin, I always triple that spice. I always add more garlic than the recipe calls for because I love garlic. A good example of going less is Rosemary, which is a strong herb. If recipe calls for tablespoons, I will only start with ½ or less teaspoons. You can always add but you can not take out. Please add condiments like sour cream, avocado, fresh herbs on top and cheese. Some soups I add a drizzle of olive oil over it before eating. Experiment and have fun with soup, make it your own.
